Today is a very special day, too.  Not only is today the first day of a long vacation from work, but it’s also my birthday.  Woo hoo!  I admit – I’m terrible with birthdays.  I am wildly organized in so many areas of my life, but I have never been able to develop a successful birthday-card-sending habit.  I would put money on the fact that I didn’t send you a card on your birthday – sorry.  As such, I don’t expect a big hoopla for my big day – but I’m a generous soul and can’t deny you the joy of celebrating my birthday.  🙂

I’m certain you look much younger than the number of years written on your birth certificate! My favorite cake is Carrot Cake-the way I make it. I use applesauce, honey & 5 grain flour (that I grind myself) in place of oil, sugar & white flour. Mine has raisins, walnuts, non-sugared coconut, & pineapple. Yummy~

    First of all Happy Birthday. My birthday is on Monday the 19th and, to tell you the absolute truth, that’s how I remember that yours in on the 16th. My favorite cake is apple cinnamon with carrot cake being the second favorite. Just the fragrance of the apple cinnamon cake when it’s baking makes my mouth water and then to eat it warm with a honking hunk of vanilla bean ice cream is unbelievably wonderful. Its been a LONG time since I have eaten a piece of cake, but I do remember that the one I used to like was a lemon cake that was poked full of holes and a very thin icing was poured over the top while the cake was hot, so it seeped down into the cake. .Happy Birthday, Brian, I visit your blog almost every day.     • My favorite cake for every day is chocolate. For Christmas, my mother’s fruitcake can’t be beat. Kay V., my mother made that cake when I was growing up.
