Today is a very special day. It’s my birthday! On this day, many year ago, my mother was first introduced to my my smiling face. She says I was always a happy baby, and I believe her when she says it. Here’s a picture of my mom opening the hand-made gift she gave me to celebrate my special day:

Coconut Cake is my absolute FAV, I’m a southern gal and my grandma always made the best Coconut Cake… I live in Minnesota now and dream of days that I can go home to see my grandma and have some coconut cake. She makes it for me every time I go an see her. It is always the best; tastes, smells, and looks AMAZING… She used to have a bakery when I was a little girl and so all her homemade goodies were Amazing… but this one always takes the Cake!!!
